In March of 2015, a dream took its first steps in Orlando with the Ají food truck, a venture that aimed to introduce a fresh perspective to Peruvian cuisine in the heart of Florida. The success was undeniable, prompting Freddy and his partners to dream even bigger.
Thus, Ají Ceviche Bar was born, a testament to Freddy’s dedication and shared vision. On a memorable day, August 23, 2018, the doors of the first Aji Ceviche Bar branch swung open, welcoming patrons to a culinary haven that marries tradition with innovation.
